What an exciting time!
I have never attended a whole weekend at Cake International and certainly never entered a competition there, so it was both an exciting and terrifying experience at the same time.
I was absolutely thrilled to achieve a Gold Medal in the Wedding Cake Category at the biggest cake show in the world.
I had a trememndous time at the show meeting up with sugarcraft friends old and new and took loads of photos. Visit My Facebook page to see photographs of the incredible exhibits and competition entries I saw.
I have always loved woodland themes, and when FPC Sugarcraft were going to release a new bark mould, I thought this was the perfect opportunity to design a cake around it.
The finished cake took 117 hours to make and included the following:
* Hand modelled characters - Squirrel, snail and mouse
* Pastillage and royal icing run out bench
* Hand cut silhouettes
* Brush embroidered and hand painted second tier
* Miniature bonsai Japanese Maple with sugar leaves
* Unbreakable Gel spiders web
* Lifelike sugar brambles, fern, oak and maple leaves and twigs
* Three varieties of modelled fungi
* Novelty base tier airbrushed and dusted to achieve the colouration
* Novelty cake separator holding sugar acorns and hazel nuts

I am thrilled to have won Best Cakes for Region 2 South Wales and Central at the Welsh National Wedding Awards after being a finalist for the third year running.
We went along to the wonderful Alice in Wonderland Themed Awards evening at the Stunning Brangwyn Hall, Swansea along with all the talented individuals in the wedding world in Wales.
The Awards also raised money for Ty Gobaith in North Wales as their charity.
Congratulations to all those that were shortlisted or won awards on the night. Thrilled to be one of you.

Did you see the cake celebrating the 10th Anniversary of the Wales Millennium Centre on the news at the end of November 2014?
I was delighted to be commissioned by Future Inns Cardiff to create the cake as their gift to the Millennium Centre.
The cake was on display for the day at the Millenium Centre for all to see and was on both the ITV and BBC Wales News.
Very Exciting and thrilled to be asked to make such an iconic building.
I entered the prestigeous Salon Culinaire competition at The Hospitality Show at the Birmingham NEC on Monday the 19th to Wednesday the 21st January 2015 and was absolutely thrilled to win gold for my wedding cake, and Silver and First in Class for my pastillage piece.
I had always wanted to make a miniature decorative exhibit, so it was a real delight to make my Harry Potter-styled piece. It was very terrifying taking my work there to be judged, but I received wonderful and helpful feedback which will be invaluable in my quest for progression.

Allister Sassafeas is a leprechaun illustrated in Arther Spiderwicks Field guide from The Spiderwick Chronicles. I have always loved the beautiful illustrations in the book, and this was the perfect time to try my hand at making a character from an illustration alone, as he never appeared in the film.
He was made from sugarpaste, a little pastillage, and chocolate paste. He is 9 1/2" tall.
The cotton is edible too. I hope you like him.

From Summer 2015 I will be teaching courses at the fabulous shop, The Vanilla Valley in Nantgarw,Cardiff.

I was thrilled to be asked to write a blog post on how to create bark effects on cakes.
It has step by step photographs on texturing the sugarpaste and airbrushing to the finished colours.

It has been a very exciting year, and what a wonderful way to finish the run of cake shows off by being honoured to have my own feature at the show. I am pleased to present The Faraway Tree at Cake International
There is a magical place called the Enchanted Wood where the trees have leaves darker than usual and sing wisha-wisha-wisha. Deep in the very middle stands The Faraway Tree. This giant and wondrous tree bears an ever-changing array of different fruits from acorns to plums all at the same time.
Unusual and delightful characters have carved their homes into the tree. Come visit Moonface in his house, and meet his friends the Old Saucepan Man, the angry pixie and Silky’s clock. If you pay him with toffee he’ll lend you a cushion to slide round and round, down the centre of the tree on the Slippery-slip.
This feature was inspired by the captivating books from The Faraway Tree Series by much-loved and prolific English author of children’s books, Enid Blyton 1897-1968.
